Chervil (Anthriscus cerefolium), a modest yet distinctive herb, is often described as the refined cousin of parsley. With its mild, anise-like flavor and delicate aroma, chervil is a beloved ingredient in French cuisine, and it is gaining popularity beyond France as well. Its subtle flavor is perfect for adding an elegant touch to dishes without overpowering them.
The chervil plant
Chervil grows best in cool, shaded environments and is a familiar sight in vegetable gardens. The plant resembles parsley but has finer, lightly curled leaves. Chervil has a refreshing aroma reminiscent of a mix of anise, fennel, and parsley, with a hint of sweetness. This aroma and flavor make it a frequent addition to dishes where balance and refinement are key.
Chervil in the kitchen
Chervil is a staple in the classic Fines Herbes mix, along with parsley, chives, and tarragon. This mix is often added to delicate dishes like omelets, light sauces, and salads. Chervil is also excellent in soups, where it is added at the last moment to retain its subtle flavor. In French cuisine, chervil is a key ingredient in the famous Potage Germiny, a creamy soup made with chervil and cream.

Chervil or cow parsley?
Chervil closely resembles cow parsley, a plant commonly found along roadsides. You can distinguish cow parsley from chervil because cow parsley has a hollow stem.
Chervil is a herb that thrives in early spring and late autumn when other herbs do not fare well.
