Elder, or Sambucus nigra, is a versatile plant that has been cherished in kitchens and traditions worldwide for centuries.
What is elder?
Elder originates from Europe and grows wherever there is a temperate climate. The plant is characterized by large, white flower clusters that bloom in summer and turn into deep purple to black berries in autumn. These elderberries can be harvested for various culinary applications. You can easily recognize the elder bush by the sweet, slightly spicy aroma the berries release when ripe.
Elder in the kitchen
From syrups to jams and juices to wine, elderberry flowers and berries are used in many food products. Here are some creative ways to use elder:
Elderberry syrup: cook 500 grams of berries with 200 ml water, the juice of one lemon, and 500 grams of sugar for about 10 minutes. Strain well after pressing the juice out of the berries. You now have a concentrated syrup that you can mix with water or use in a cocktail. The syrup is also perfect for pancakes or yogurt!
Elderberry jelly: a delicious addition to a cheese board or desserts. The berries give the jelly a rich, dark color and a lightly sweet taste.
Elderflower lemonade: the fragrant elderflower can also be used to make lemonade. It has a floral, fresh taste that is perfect for a summer day.
